I ended up meeting my Mom for lunch at our favorite mexican restaurant. I had 7 chips with salsa and pollo loco which is grilled chicken with pico de gallo and guacamole it came with rice and corn tortillas but I passed on those. I only ate one of the pieces of chicken and a quarter of the pico and guacamole.
For dinner I made the barbecue chicken stuffed sweet potatoes with my friend Corey. We baked the sweet potatoes for around 45 minutes then marinated chicken in white wine vinegar and a dash of salt and 2 tbs of olive oil. Then you brown the chicken and add the barbecue sauce. Once the sweet potatoes are done you cut them open and mash them up while trying leaving the skin intact. Once it is mashed add a little salt and a tiny bit of butter then you pour your chicken and barbecue sauce in the potato. We mixed scallions with greek yogurt instead of sour cream. There was also a salad of lettuce carrots and tomato with a dressing that is one part dijon mustard to one part white wine vinegar.
Breakfast: 300 calories
Lunch: Chips and salsa: 150
Chicken breast with guac and pico around 250 calories
Dinner: Sweet potato stuffed with barbecue chicken and greek yogurt with
Salad with dijon mustard vinaigrette : 421 calories
I overestimated some of the calories so it may be a little less but I would rather overestimate than under
Dessert: banana baby 130 calories

I made pumpkin bread with chocolate chips to have for breakfast tomorrow! I am excited.
I got a free trial subscription to vegetarian times from blue cross, and VT had and article on sweet potatoes varieties. Apparently, white sweet potatoes are less sweet, so I got some the other day when I sent you all those pics from berkeley bowl. I'll let you know how the experiment goes. I'm thinking baked sweet potato fries.
